I’ve been making a ton of maple dishes recently to prep for my upcoming Iron Chef: Maple Edition contest among friends. I’m pretty stoked because maple is pretty much the best ingredient in the world (yes, the world) and makes every dish de-lish!
This is a really easy recipe that you can either serve as a side or incorporate in any number of salads.
- 6 medium beets, peeled and cut
- 3 tbsp olive oil
- 3 tbsp maple syrup
- pinch of salt
- Pre-heat oven at 400.
- Mix all ingredients together and lay flat on a cooking sheet lines with parchment paper.
- Roast for 20 minutes, stirring half way.
- Your hands will get all red and bloody looking. It's ok!! It washes off! 🙂
